Department of Food Science, Section for Food Microbiology, Gut Health and Fermentation invites applicants for a 24 months’ Post Doc position in
Bacillus-fungal co-culture based fermentations for improved nutritional and sensorial value of plant based food matrices. The project is part of the research project “PROFERMENT: Solid-state fermentations for protein transformations and palatability of plant-based foods”, which is financed by the Novo Nordisk Foundation.
Start date is (expected to be) January 1st 2026 or as soon as possible thereafter.
The postdoc’s duties will include research within
Bacillus-fungal co-cultures in various food-related matrices
as well as teaching. The post may also include performance of other duties.
The applicant is expected to have solid, documented experience within several of the following areas: Cultivation and genotypic and phenotypic characterization of
Bacillus spp.; Cultivation of food grade fungi (
Rhizopus and/or
Aspergillus oryzae); Determination of metabolites (amino acids and others) from
Bacillus and/or fungal fermented plant-based matrices; Solid-state plant-based fermentations.
